Non siamo troppo pignoli! Certo se volete fare il pesto alla genovese senza il basilico l'impresa è ardua, ma la fantasia non ha limiti, molte ricette oggi molto quotate sono nate per errore o per contingenza. Anzi se scoprite qualche miglioria alle ricette proposte, mi farebbe piacere saperlo. Del resto non ci sono rigorose formule, molti piatti hanno ricette che appartengono alla tradizione popolare non hanno una lista di ingredienti precisi, e non è mia intenzione fissarle, non ho questa presunzione. Le mie proposte sono solo esempi collaudati che hanno sposato il mio gusto, ma basta chiacchiere: buon lavoro e buon appetito.
