Studienarbeit aus dem Jahr 2015 im Fachbereich Ernährungswissenschaft / Ökotrophologie, Note: 2,0, , Veranstaltung: Ernährungsberater B, Sprache: Deutsch, Abstract: Während einer Ernährungsberatung stehen insbesondere die aktuelle Ernährungssituation des Kunden, gesellschaftliche Einflüsse und Trends sowie deren Auswirkungen im Vordergrund. Den Einfluss auf die Ernährung des Kunden zu beenden geschieht langsam und ist mit viel Engagement seitens des Klienten verbunden.
In der vorliegenden Arbeit gehe ich von vier Klienten mit unterschiedlichen Rahmenbedingungen und ähnlichen Zielen aus. Der allgemeine Einwirkung deren Umwelt auf das eigene Essverhalten spielt dabei eine wesentliche Rolle und kann zu ernährungsbedingten Beschwerden und Krankheiten führen bzw. diese erhöhen.
Eine Frage ist bei allen Fällen gleich: Mit welchen individuellen Empfehlungen können die vier Klienten ihre Ziele erreichen? Auf diese Frage möchte ich versuchen eine Antwort zu finden.
Methode
Die Fallbeispiele dienen in erster Linien zur Veranschaulichung wie eine Ernährungsberatung im Alltag aussehen kann. Dafür wird ein vom Klienten ausgefülltes Ernährungsprotokoll und dessen Anamnese analysiert und interpretiert. Ausgewählte Sekundärliteratur aus der Ernährungswissenschaft dient mir als wissenschaftliche Unterstützung bei der Empfehlung eines individuellen Ernährungsplanes.
Bei der Bearbeitung der einzelnen Ernährungspläne gehe ich davon aus, dass alle einzelnen Ziele, durch Anwenden der DGE-Referenzwerte verteilt auf 3-5 Vollwertmahlzeiten, erreicht werden können
Der Hauptteil meiner Arbeit soll eine beispielhafte Ernährungsberatung in der Praxis darstellen. Dafür beleuchte ich die individuellen Rahmenbedingungen und Ziele von 4 Klienten. Zuerst wird deren Anamnese und Ernährungsprotokoll analysiert und interpretiert um anschließend entsprechend deren Zielvorgabe individuelle Vorschläge anbieten zu können. Mahlzeiten für jeweils 1 Ernährungstag veranschaulichen meine Empfehlungen. Eine kurze Zusammenfassung mit persönlichem Fazit runden die Arbeit ab.
